The grapevine structure

The grapevine cluster is made of a rachis and berries.

The rachis

On the central axis, we find the peduncle, with the pedicels. The rachis is made of all green parts of a cluster. The stalk is made for the most part with water, fibers, tannins and minerals.

The berry is made of:

  • film or skin that surrounds the fruit. It is covered with a wax dust called bloom, which makes a non-wettable film. It includes yeast involved during the fermentation.
    The film contains odorous substances and coloring tannins smoother than the ones from the rachis.
  • pulp, with juice made of water, sugars and acids.
  • seeds, 1 or 2 per berry, made of tannins and oils (0.5 l of oil for 1 hl of wine).
There are 3 categories of varietals:
  • Varietals with white skin and white pulp : blanc de blanc
  • Varietals with red skin and white pulp: blanc de noir
  • Varietals with red skin and red pulp:dyer varietal
